Shrimp Tacos with a Maple Mango Salsa

As we enter the warm summer seasons, we're excited to start sharing some of our favourite summer recipes! First, our shrimp tacos. This is a tasty and healthy recipe you can enjoy for lunch or dinner. For this recipe, we paired our shrimp tacos with Maple Mango Salsa and a lime and cilantro sauce. Tell us what you think! 
Shrimp Taco Ingredients: 
  • Around 20 shrimp 
  • 2 tablespoons butter
  • 1/4 teaspoon garlic powder 
  • 1/4 teaspoon ground cumin 
  • 1/4 teaspoon chili powder  
  • flour tortilla shells 
  • optional: 1 avocado
  • optional: banana peppers  
Maple Mango Salsa Ingredients: 
  • 1 mango 
  • 1/2 red onion 
  • 1/2 red pepper 
  • 1 jalapeno (more or less depending on spice level) 
  • 1/5 cup chopped cilantro
  • juice from 2 limes  
  • 2 tablespoons Wabanaki Maple's Bourbon Barrel Aged Maple Syrup 
  • 1/2 teaspoon ground cumin 
  • 1/2 teaspoon garlic powder 
  • 1/2 teaspoon chili powder
Lime & Cilantro Sauce Ingredients: 
 
Instructions:
  1. Shrimp: In a medium pan, on low-medium heat, begin by melting your butter. As the butter melts, prep your shrimp by peeling and deveining them. Add your shrimp to the butter and add garlic powder, ground cumin, and chili powder. Fry until fully cooked.  
  2. Salsa: Finely chop your mango, red onion, red pepper, and jalapenos, and add into a medium bowl. Mix in the cilantro, lime juice, maple syrup, and spices. Cover and set aside. 
  3. Sauce: In a blender, add the sour cream, mayonnaise, lime juice, lime zest, cilantro, garlic, and maple syrup. Blend until smooth adjusting the flavour as you please.  
  4. Assemble: Fry your flour tortilla in a hot pan for a couple minutes on both sides until toasted. Once warm, add a layer of salsa and the shrimp. Add your choice of toppings; in this recipe we added chunks of avocado and banana peppers. To finish your taco, top it with your sauce and extra cilantro!
