Recently our team participated in SIAL Canada in Toronto, a food-industry expo. We participated in the Atlantic Pavillion where our friend Chef Alain, The Kilted Chef, created some beautiful recipes with maple syrup for attendees to taste. Here is our take at his Dan Dan Noodles recipe using our Wabanaki Maple Bourbon Barrel Aged Maple Syrup.
Sauce Ingredients:
Additional Ingredients:
  • 4 tablespoon chili oil 
  • 1/2 lb ground pork 
  • 1 teaspoon ground pepper
  • 3 tablespoons Wabanaki Maple's Bourbon Barrel Aged Maple Syrup 
  • 2 cups chopped mushrooms 
  • 1-2 medium shallots chopped 
  • 8 oz noodles 
  • 2 1/2 cups chicken broth 
  • 2 cups fresh baby spinach 
  • 4 green onions 
  • 1/4 cup chopped dry roasted peanuts 
Instructions:
  1. Sauce: Whisk together the sauce ingredients listed above until fully combined; soy sauce, hoisin sauce, rice vinegar, peanut butter, maple syrup, and water. Set aside.
  2. Broth: In a pot, combine half of the sauce mix and the chicken broth. Bring the broth to a simmer then stir in the spinach. Once the spinach is fully cooked in the broth, set the broth aside and keep it warm.  
  3. Meat: In a saute pan, add in the chili oil and ground pork. Season with the ground pepper and maple syrup. Cook for a few minutes then add in the chopped mushrooms and shallots. Cook for another 5-10 minutes then add in the rest of the sauce. Cook until the sauce carmelizes and coats the meat. 
  4. Noodles: Cook your noodles according to the instructions on their packaging. 
  5. Assemble: To assemble the dish, start by ladling the broth into a bowl. Next, add in the noodles, then spoon the meat over top. Serve your Dan Dan Noodles topped with green onions and chopped peanuts!
