Sage & Maple Whipped Butter on Bannock

Prep & Cook Time: 30 to 45 minutes 
This recipe blends all of our favourite Indigenous staple ingredients and recipes into one. You might be familiar with bannock, or frybread, a form of bread that was originally used for survival and is now a common recipe for Indigenous cultures across Turtle Island. In this recipe, we made baked bannock with a beautiful whipped butter recipe using our Traditional Maple Syrup and sage, one of our sacred medicines. 
Bannock Ingredients:
  • 4 cups of flour
  • 4 teaspoons of baking powder 
  • 1 teaspoon of salt 
  • 2 tablespoons of vegetable oil
  • 1 1/2 cups of water   
Whipped Butter Ingredients:
Bannock Instructions:
  1. Preheat your oven to 375 degrees. 
  2. In a large bowl, mix together the flour, baking powder, and salt.
  3. Create a well in the centre of the bowl. Add in the oil and a small amount of water. 
  4. Mix the ingredients together while slowly adding in the rest of the water. Once all of the water and flour mixture is combined, add your dough to a floured surface and form it to your liking. Careful not to over-knead the dough. 
  5. Place your dough on a baking sheet and poke holes in the top of the dough with a fork. 
  6. Bake in the oven for 30 to 35 minutes. 
Whipped Butter Instructions: 
  1. Melt the butter in a pan. Once melted, add in your fresh sage leaves. Cook the butter on medium heat until it's browned, stirring and monitoring regularly to ensure the butter doesn't burn. 
  2. Once the butter is fully browned, set aside in a metal or thin bowl. Remove the sage leaves then mix in the maple syrup and paprika. 
  3. Set the bowl on top of another bowl with ice, and whisk the butter mixture over the ice until it hardens. This will take some time, but make sure to continuously whisk the butter during this process.  
  4. Once the butter has hardened, serve on your bannock!
