Pumpkin Muffins with Wabanaki Maple Sugar

Ingredients
  • 4 eggs
  • 2 cups white sugar
  • 1 1/2 cups oil 
  • 1 3/4 cups pure pumpkin 
  • 3 cups all purpose flour
  • 1 tbsp cinnamon 
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 3 tbsp Wabanaki Maple Sugar
Directions
  • Beat eggs. Add white sugar, oil, pumpkin and beat thoroughly.  Add dry ingredients and mix until smooth.
  • Fill greased or lined muffin tins 2/3 full and sprinkle tops with  Wabanaki Maple Sugar.
  • Bake at 375 degrees for 15-20 minutes. 
  • Yields 18-24 good size muffins.
