Banana Bread
We love it when our friends send us recipes using our maple syrup! Check out this recipe from our friend Rick, (Give him a follow at @peasfullfare on Instagram) he's created a delicious Banana Bread using our Bourbon maple syrup!
Ingredients:
- 4 ripe bananas
- 1/4 cup melted coconut oil
- 1/4 cup Wabanaki Maple bourbon maple syrup (to drizzle just before the loaf is done)
- 2 tbsps apple sauce
- 1 tsp vanilla
- 1 & 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 3/4 cup vegan chocolate chip
- Preheat Oven to 350 degree Celsius.
- In a large mixing bowl add all the dry ingredients
- In a smaller bowl – mash the bananas until they are smooth with almost no lumps. Add in the remaining wet ingredients to the bananas and mix to combine.
- Add the wet ingredients to the dry bowl and mix well.
- Add in chocolate chips.
- Pour into an 8 or 9 inch non-stick loaf pan
- Top with extra chocolate chips.
- Total bake time will be about 40 minutes or until a toothpick comes out clean.
- About 5 minutes before the loaf is done, remove from oven and drizzle with Wabanaki maple syrup and allow to bake the remaining 5 minutes. The top will be sticky.
- When loaf is done, drizzle a bit of extra maple on top and allow to cool on a wire rack for a couple of hours.
