Banana Bread made with Wabanaki Maple Bourbon Barrel Aged Maple Syrup

Banana Bread

We love it when our friends send us recipes using our maple syrup! Check out this recipe from our friend Rick, (Give him a follow at @peasfullfare on Instagram) he's created a delicious Banana Bread using our Bourbon maple syrup!


Ingredients:

  • 4 ripe bananas
  • 1/4 cup melted coconut oil
  • 1/4 cup Wabanaki Maple bourbon maple syrup (to drizzle just before the loaf is done)
  • 2 tbsps apple sauce
  • 1 tsp vanilla
  • 1 & 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 3/4 cup vegan chocolate chip
Directions:
  • Preheat Oven to 350 degree Celsius.
  • In a large mixing bowl add all the dry ingredients
  • In a smaller bowl – mash the bananas until they are smooth with almost no lumps. Add in the remaining wet ingredients to the bananas and mix to combine.
  • Add the wet ingredients to the dry bowl and mix well.
  • Add in chocolate chips.
  • Pour into an 8 or 9 inch non-stick loaf pan
  • Top with extra chocolate chips.
  • Total bake time will be about 40 minutes or until a toothpick comes out clean. 
  • About 5 minutes before the loaf is done, remove from oven and drizzle with Wabanaki maple syrup and allow to bake the remaining 5 minutes. The top will be sticky.
  • When loaf is done, drizzle a bit of extra maple on top and allow to cool on a wire rack for a couple of hours.
