Barrel Aged Bourbon Maple Pie


Treat yourself to a slice of comfort with our Barrel Aged Bourbon Maple Pie! Experience the richness of our Barrel Aged Bourbon Maple Syrup, gently infused with cinnamon, creating a filling baked in a graham cracker crust, and enhanced by the bright zest of orange and a hint of rosemary.


Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs 
  • 1/3 cup granulated sugar
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary leaves, finely chopped
  • 1/2 teaspoon kosher salt
  • 1/2 cup (1 stick) unsalted butter, melted

For the filling:

  • 1/2 cup Barrel Aged Bourbon Maple Syrup
  • 1/4 teaspoon ground cinnamon
  • 1 cup heavy cream
  • 1 large egg
  • 1 large egg yolk
  • 1 tablespoon cornstarch
  • 1/2 teaspoon kosher salt

Serve with:

  • Whipped cream
  • Maple syrup (optional)

Method:

  • For the crust: Add the graham cracker crumbs, sugar, salt, cinnamon, and melted butter. Add the orange zest and chopped rosemary. Note: If you would like a firmer crust, add more butter!
  • Mold into a 9-10 inch pie pan and then bake the crust at 325 F for 10 minutes. Let it cool thoroughly before filling it.
  • For the filling: In a small pot over medium heat, bring the maple syrup to a boil, and cook until the colour transitions from a pale golden brown with lots of small, fast bubbles to dark golden brown with larger, slower bubbles, approximately 8–10 minutes. 
    1. Once the maple syrup has reached the desired caramelized stage, add the cinnamon, and slowly add in the heavy cream. Add the cream in small increments so the maple syrup does not harden. Remove from heat, and set aside.
    2. In a medium bowl, whisk together the whole egg, egg yolk, cornstarch, and salt. Add the maple syrup mixture in increments and whisk together. 
    3. Add the maple mixture into the baked crust. Bake for 30-35 minutes until the filling has set. 
    4. Let the pie completely cool before serving. Serve with whipped cream and a drizzle of maple syrup.
